An exceptional hybrid sturgeon that crosses the large freshwater Kaluga sturgeon (Huso dauricus) with the Japanese sturgeon (Acipenser schrenckii), the Huso-Schrenckii sturgeon yields this remarkable Imperial Prime caviar.

Imperial Prime caviar from the Huso-Schrenckii sturgeon boasts large pearls that range from golden to a rich amber color, a striking combination that is immediately recognizable. Each pearl has a pleasantly firm texture and a slightly briny, oceanic taste that culminates in a clean finish.

Khavyar’s Imperial Prime caviar is sustainably farmed in China. While both the sought-after Kaluga sturgeon and Japanese sturgeon alike are no longer able to be wild-caught due to their threatened status, this remarkable hybrid sturgeon has been created to preserve the fine qualities of each breed’s world-class caviar. The resulting hybrids are carefully raised in China using exacting aquaculture advancements.

Because of its unique hybrid nature that combines the best of two of the world’s most prized sturgeon caviars, we suggest serving chilled Imperial Prime caviar with a mother-of-pearl spoon to best showcase its remarkable flavor and presentation. However, this caviar also nicely complements a fine cut of salmon, and can be served as a garnish on seared fish to complete the indulgent experience.
